Step By Step Instructions:

Gilly’s Power Up Feel Good Snack Boxes!

I love blogging. I love writing and sharing ideas  and recipes with all of you, and I also love seeing a plan come together! Last year I made a decision to join Orange Theory Fitness Holly Springs, and it was one of the best decisions I made all year! (Other than launching my blog, of course!) 

At the beginning of the new year I made a promise to myself to get better at meal planning and prepping, and to try and start preparing healthier and better snack options for my boyfriend and I. After a litte research and development, these glorious snack boxes were born! 

I am so proud of how these turned out, and I can’t wait to hear what all of you think! So far we’ve been snacking on these for a few days, and it has definitely been a cleanse for our bodies. With less snacks in the cabinet, and grab and go boxes in the fridge, these babies have made all the difference! Enjoy 🙂 

Here is what you do:

1. Always clean fruits and veggies before preparing and serving 

2. Set out all the tupperware on to a table or clean, flat work surface and remove the lids

3. Slice the Cucumber into rounds and set aside

4. Remove the carrots from the bag and place in strainer, rinse and set aside 

5. Slice the ends and leaves off of the bunch of cucumber, and slice each stalk in half, or if a longer stalk, into thirds 

6. Slice the Stem portion off of the bell pepper, lay the pepper on it’s side and make a slit, place the knife in the slit and turn the pepper to to cut off all the edges, then discard the seeds and stem

7. Rinse off the blueberries, strawberries, and grapes and set aside 

8. Slice the cheddar cheese, 16 pieces (2 for each box) 

9. Scoop the peanut butter into the dressing containers with lids and set aside, (This is not a sponsored post, I just prefer creamy Jif)

10. Place the peanut butter into the container first as to not smash anything. Evenly distribute all fruits, veggies, and cheese into all of the containers, adding the cheese in last

11. Place the lids on all the containers and then put them in the refrigerator immediately. When ready for a snack, enjoy!


INGREDIENTS:

  • 1 Quart Strawberries 
  • 1 Orange Bell Pepper, Sliced Julienne, Seed and Stem Removed 
  • 1 Bag Small Colorful Baby Carrots 
  • 1 Cucumber 
  • 1 Bunch Celery 
  • 1 Pint Blueberries 
  • 1 Bag Purple Grapes 
  • 16 Small Pieces Cheddar Cheese 
  • 8 Small Scoops Peanut Butter
