Step By Step Instructions:

My Favorite Meatloaf Sammies w/ Crispy Fried Onion Straws

I LOVE sandwiches. Sandwiches are amazing because they never go out of style, and everyone loves them! When I have leftovers in my fridge, my favorite way to use them up is to make some delicious sammies. These specific sandwiches were made on a cold day in January, and are the perfect comfort food; especially after a long day when all you want is a hot meal and some Netflix.

I would assume anyone who loves meatloaf is going to love this recipe. It’s fast in the sense that all you have to do is combine the ingredients in a pan, then make a loaf, and throw the loaf in the oven! It can be time consuming if you want to make your own onion straws like I did! 🙂 But, it’s totally worth it in the end! (If you really want it to be a quick meal, you could prep the loaf and onions ahead of time and make sandwiches the next day. You could even buy those crispy onion straws that go on top of the green bean casseroles we all love!)

 

To Make the Meatloaf : 

1. Heat oil in a saute pan, then add in your chopped onion, garlic, thyme, and a dash of salt and pepper 

2. Cook for about 10 minutes, or until your onions are translucent (do not brown them)

3. Lower the heat and add in the worcestershire sauce, tomato paste, chicken stock, & a dash of salt, and mix well

4. Use a wooden spoon to scrape the bits off the bottom and sides of the pan, then remove from heat and let stand and cool for 10-15 minutes 

5. In a large mixing bowl add in your ground angus beef, ground chuck, 3 strips raw bacon diced, the onion mixture, eggs, bread crumbs, & 1/2 cup of ketchup and mix all together (optional to add in a few red pepper flakes!)

6. Place the mixture on a foil lined baking sheet, and form into a nice rectangle-shaped loaf 

 

 

7. Grab a small mixing bowl and combine the rest of your ketchup with the brown sugar and whisk together. Once mixed, brush 1/2 of the mix on top of the meatloaf, and reserve the rest for dipping

8. Place your loaf in the oven and cook for about an hour, or until the internal temperature is between 160 & 165 degrees F

9. Slice the meatloaf once removed and cooled for a few minutes

 

To Make Crispy Fried Onion Straws :

  1. Heat oil in a saute pan, enough for about an inch of oil
  2. In a bowl combine the flour and salt
  3. In a different bowl, add the buttermilk
  4. In batches to not over crowd the bowls and the saute pan, take the sliced onions and dredge them in the milk, then dip them in the four, and then add them to the hot oil in the pan (be careful not to splash hot oil on yourself or the stove top)
  5. Repeat until all the onions are fried. If frying in batches, place the onions on a paper towel lined plate or surface when done, and sprinkle a dash of salt over each batch
  6. Set onions aside and turn off the burner when finished 

 

 

To Make Meatloaf Sammies w/ Crispy Fried Onion Straws:

1. Slice the Ciabatta bread into sandwich style pieces 

2. Top with 1 or 2 slices of meatloaf

3. Layer the mozzarella cheese on top 

4. Place some crispy fried onion straws on top of the cheese

5. Top with some of the reserved meatloaf sauce, and the top slice of bread, and enjoy!

Here is what you do:

INGREDIENTS:

  • 1 LB Ground Angus Beef 
  • 1 LB Ground Chuck 
  • 3 Strips Raw Bacon, Diced Small 
  • 1.5 T EVOO 
  • 2 Medium Chopped Yellow Onions 
  • 1 t Fresh Chopped Thyme 
  • 2 T Sea Salt, Divided (To Taste)
  • 1 t Fresh Cracked Black Pepper 
  • 3 T Worcestershire Sauce 
  • 2 Minced Garlic Cloves 
  • 1/4 Cup Chicken Stock 
  • 1/4 Cup Breadcrumbs
  • 1 T Tomato Paste 
  • 2 Cups Ketchup 
  • 3 Beaten Eggs 
  • 1/2 Cup Brown Sugar 
  • 1 White Onion, Thin Slices
  • 3/4 Cup AP Flour
  • 3/4 Cup Buttermilk
  • Veggie Oil for Frying Onion Straws  
  • 1 Loaf Ciabatta Bread, Sliced 
  • Mozzarella Cheese Slices
  • Crispy Fried Onions Straws  
  • Meatloaf Sauce (Optional) 

DIRECTIONS:

Set oven to 350 

1. Prep the chopped yellow onion mixture in a saute pan w/ EVOO and spices, then set aside and let cool 

2. Mix your meats, onion mixture (let cool first), and rest of ingredients together in a large mixing bowl, and whisk the remaining ketchup and brown sugar in a small mixing bowl

3. Form a rectangle shape on the foil lined baking sheet, and top with 1/2 the ketchup and brown sugar mixture (reserving the rest for dipping)

4. Place the loaf in the oven for about an hour, or until cooked between 160-165 F

5.  Make crispy fried onion straws and set aside until meatloaf is done 

6. Once meatloaf is done, let cool and then slice thin for sandwiches 

7. Build your sandwiches to your liking 🙂 

8. Enjoy!!
