Step By Step Instructions:

Grilled Corn and Heirloom Summer Salsa 

 During summer it’s common to be overloaded with heirloom tomatoes and fresh corn. I love having all these fresh produce items on hand but generally have a hard time using them before they go bad. After doing some research I decided that Summer Salsa was a must, as it’s the perfect way to use up all these fresh items at once! It’s a fantastic addition to Tacos, Taco Salads, or as a Dip, and it travels well when headed to the beach, or relaxing poolside. Here is what you do:

1. Set your oven to 375

2. Leaving the husks intact, place 2 ears of corn on a baking sheet pan and when the oven is up to temperature, place on the middle rack (Note: Using scissors, I cut some of the strings off the tops of the cobs before placing in the oven, optional)

3. Bake the corn for 30 minutes, flipping them to the other side halfway through

4. Remove corn from oven after 30 minutes, and set aside to cool 

5. Chop your tomatoes, red onion, jalapeno, and cilantro, and add them to a medium-sized mixing bowl 

6. Drizzle the salsa mixture with lemon-flavored EVOO (or lemon juice and olive oil) drizzle some of each, taste the salsa with a spoon, adjust to your liking

7. Sprinkle the mixture with a dash of sea salt and fresh ground pepper, and then add in the juice from 1/2 a lime. (Adjust the seasonings and lime juice to your liking) 

8. When corn has cooled, remove the husks and strings, carefully cut the corn off of the cobs, and then add the corn the to salsa bowl. Mix well, taste test, and adjust accordingly!

9. You can chill before serving if you like, but it will be perfect as is, enjoy! 

 


INGREDIENTS:

  • 1 Lg Green Heirloom Tomato 
  • 1 Lg Red Heirloom Tomato 
  • 2 Ears Corn, Roasted, Removed From Cobs
  • 1 Jalapeno, Deseeded, Minced
  • 1/3 Cup Red Onion, Diced 
  • 1/2 Cup Fresh Cilantro, Chopped 
  • Sea Salt, Dash, To Taste 
  • Fresh Ground Pepper, To Taste
  • Lemon EVOO, Drizzle, To Taste (or Lemon Juice and EVOO)
  • 1/2 Lime, Juiced
