Step By Step Instructions:

Beachside Lemon & Garlic Guacamole 

When you live in North Carolina you’re always a hop, skip, and a jump away from the mountains or the beach, and it is such wonderful feeling! This is my favorite vacation guac, or anytime guac, and it’s the perfect companion to your vaca beer! Cheers! 

 

Here is what you do:

1. Slice the Avocado in 1/2 and remove seeds but don’t throw them away

2. Using a sharp knife, make slices into the avocado lengthwise (with the         shell on)

3. Take your knife, or a spoon, and remove the slices of avocado from their   shells and place into a glass mixing bowl

4. With a muddler, or a fork, begin to mash up the avocados and mix well

5. Drizzle a little tiny EVOO over the mixture, and add in a dash of salt and pepper, and mix again. (Salt and pepper optional, taste and season to your liking)

6. Add in the diced onions, minced garlic and mix again

7. Drizzle a little more of the lemon into the guacamole and taste, season accordingly!

8. Add the avocado seeds to the bowl, and refrigerate for 30 minutes before serving. (NOTE: This step is optional, but I love slightly chilled guac, and the seeds in the bowl along with the lemon juice, help to keep the avocado from browning too quickly.)

 


INGREDIENTS:

  • 2 Avocados 
  • 2 Garlic Clove, Smashed, Minced 
  • 1 Lemon, Seeds Removed and Juiced
  • Sea Salt, Dash 
  • Ground Pepper, Dash 
  • 1 t EVOO 
  • 3 T White Onion, Diced Small
